Last week I had a few bananas sitting on the counter turning black. I made a batch of my banana nut bread that makes two loafs and those two loafs of my fresh homemade banana nut bread was gone FAST.
If you have some bananas you don’t want to waste and like banana nut bread, below is an recipe that is easy to make and makes two loafs of delicious bread. I used walnuts but you can also use pecans too!
Easy Banana Nut Bread Recipe
Ingredients
- 2 1/4 cups flour
- 2 cups sugar
- 1/2 teaspoon salt
- 3/4 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla
- 1 1/3 teaspoons baking soda
- 1/4 cup milk
- 1 cup chopped walnuts
- 3-7 bananas over ripe works best
Instructions

In a bowl add sugar, flour, salt and baking soda. Stir to blend ingredients.

In a large bowl smash bananas. Add vegetable oil, vanilla and eggs.

Add dry mixture to wet mixture and mix well. Fold in walnuts.

Grease two loaf pans and bake at 350° for 1 hour or until toothpick comes out clean.
