Some pasta salads are served as a side dish while others are served as a meal. I am a big fan of pasta salads because the possibilities are endless.
Yesterday I made some Avocado Bacon Pasta that I will be making again soon.
I used some Fusilli pasta that I found at the store but you can use Rotini or Bowtie to make this same dish. What I love about this pasta salad is that I make a creamy avocado dressing to go along with it.
This pasta salad has diced avocado, diced cherry tomatoes, olives and BACON! The flavor combo is delicious.
Then with the avocado dressing it is sure to be a hit…
For those that want to give it a try, here is the recipe for this yummy avocado bacon pasta salad.
Avocado Bacon Pasta Salad
Ingredients
- 8 oz Fusilli or Rotini pasta
- 1 cup Cherry tomatoes diced
- 6 pieces of crispy bacon crumbled
- 2.25 oz can chopped olives
- 2 avocados
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 cup heavy cream
- 1/4 cup milk
- lime juice
- salt & pepper
Instructions

In a blender add 1 avocado, 1 tbs lime juice, cumin, garlic powder, heavy cream, milk and salt and pepper to taste. Blend unto smooth.

Cook pasta according to directions. Once done drain pasta and run water over it to make the pasta cold.

Combine pasta and dressing in a bowl and lightly toss to mix.

For best results keep pasta in refrigerator for at least 1 hour before serving.
