It sometimes can be challenging getting my kids to eat different vegetables. We eat green beans, corn, carrots and celery often but when it comes to vegetables like bell peppers or say Brussels sprouts, the kids would normally prefer to have something else. There are are times when I will sneak in the veggies or get creative with them.
One meal that my family enjoys is bell peppers. Even though the youngest two don’t eat the bell pepper that they are baked in, there is a little bell pepper in the mixture inside that they love.
McCormick recently came out with new McCormick’s ® Skillet Sauces® that I found at Walmart that makes creating delicious meals at home a breeze! When I seen the Sweet & Smoky Sloppy Joes Skillet Sauce I knew this would be perfect for making stuffed bell peppers with.
If you have never made stuffed bell peppers, they are EASY to make and turn out so good. Here is just how easy they are to make.
Step One
First you will want to remove the stem from the top of the bell pepper and cut off the top (about 1/2 inch). Keep the tops but throw away everything else inside.
Step Two
Next cut a few of the tops from the bell peppers into small pieces. In a skillet add 1 pound of lean ground beef, add the bell peppers and cook meat until browned. Drain fat.
Step Three
Add 1 packet of the Sweet & Smoky Sloppy Joes McCormick’s Skillet Sauce.
Step Four
Add 1 cup cooked rice and 1 cup shredded cheese and mix until blended.
Step Five
Add the meat mixture into each of the bell peppers making sure not to put to much. With 6 bell peppers mine filled each pepper almost 3/4 full or more.
Step Six
Bake at 350° degrees for 25 minutes. Remove from oven and top each bell pepper with some mozzarella cheese.
Step Seven
Bake another 15 minutes or until cheese is fully melted. Remove from oven again and allow to cool.
When I baked these yummy peppers I did use parchment paper on the bottom of my cookie sheet for easy cleanup. You can find these new McCormick’s ® Skillet Sauces® at Walmart in the isle with the spices. Here are the seven flavors you will want to look for:

Ingredients

- 1 cup shredded cheese cheddar/jack mix
- 1 cup shredded cheese mozzarella
