One of my FAVORITE types of cookies would definitely be cookies that include peanut butter. I really like the soft and chewy peanut butter cookies that have you wanting more after the first bite. Below is a recipe for some YUMMY soft and chewy peanut butter cookies that I baked yesterday to celebrate the new and upcoming year.
Soft & Chewy Peanut Butter Cookies Recipe
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup packed brown sugar
- 1/2 cup butter softened
- 1/2 cup peanut butter
- 1/4 teaspoon salt
- 1 egg
Instructions

In a large bowl or mixing bowl, add butter and sugars and beat until creamy.

Add peanut butter and egg beat to blend well.

In separate bowl, add the remaining dry ingredients, stir well and add to other butter/sugar mixture.

Place dough mixture covered in refrigerate for at least 3 hours to allow dough to become more firm.

Shape dough into 1" inch balls and place on cookie sheet. Use a fork to create a crisscross pattern on dough.

Bake at 300 degrees for 15 minutes. Cool on baking sheet 1 minute and move to wire racks to finish cooling.

I love Peanut Butter cookies and will be trying this recipe for sure. The ones we usually make are more crispy then chewy so this will be a nice change.
